Ginger Shrimp and Mango Skewers with Essential Oil

Ingredients

lb
Shrimp, raw, peeled, deveined with tails cut off
2
tbsp
olive oil
½ - 1
tsp
crushed red pepper flakes
zest of 1 lemon
2
large cloves garlic
1
drop
Ginger essential oil
3
drops
Lemon Essential Oil
3
heaping tbsp
fresh cilantro, chopped
2
mangoes
sea salt to taste
pepper to taste
Crema
7
oz
full fat coconut milk or coconut cream
juice from zested lemon
2
drops
Lemon essential oil
salt and pepper to taste
Instructions
Place ingredients, minus mangoes, in a glass dish and shake/stir until evenly coated.
Marinate for 1 - 24 hours.
Cut mangoes into chunks and assemble skewers.
Meanwhile, put all of the crema ingredients in a medium bowl and whisk to combine.
On a hot grill, cook the skewers for 2 - 3 minutes per side.
Put skewers on a platter, drizzle with the crema, and garnish with fresh, chopped cilantro.
